with Brown Rice, Quinoa, Chia, and Berries or Raisins

There is something really satisfying about eating a delicious dessert type food, and having no guilt at all because it is is packed with SUPERFOODS, and is positively amazing for your health and your body.

I will first tell you how to make this delightfully easy Superfood Pudding, and then share with you all the amazing health benefits you get from eating it. 

 Recipe for my Superfood Pudding

1 C Brown Rice
1/2 c Quinoa (washed)

  Rise the Quinoa and then cook the Brown Rice and Quinoa in a Rice Cooker with 3 C water.

When the rice is cooked, put the rice quinoa in a glass bowl and add the following: 

1-2 Tablespoons Chia Seeds
1 1/2 Tablespoons Cornstarch
1/2 teaspoon Maca Powder (Optional - you can increase this or decrease it if you need the benefits of it.)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 c. Berries or Raisins
1 teaspoon vanilla
2 eggs
2 Tablespoons Brown Sugar or Maple syrup

Stir well until eggs and cornstarch are well mixed in,
 then add 1/2-1 c milk

Add enough milk to cover the rice and make it look like a soupy mixture in the photo below.

Cook for 2 minutes and stir.  Cook for 2 more minutes and stir.  Cook another 2 minutes and stir. (Total of 6 minutes)  Mine at this point looked like the photo below.  If it is still too runny, cook it for a few more minutes.  Remember though that it will thicken more as it cools.

You can serve it sprinkled with cinnamon sugar and whipped cream if desired.

Brown Rice : Superfood.

They absords 10-12 times their weight by absorbing water which makes you feel more full and helps you to lose weight. It also feeds the friendly bacteria in your intestines which is absolutely crucial for your health.

Quinoa: Superfood

Quinoa is one of the most popular super foods because it is very nutritious. They have 2 rare flavonoids that have been shown to be anti-inflammatory, anti-viral, anti-cancer, and anti-depressant. It is high in fiber reducing blood sugar levels and lower. Cholesterol, and increasing fullness to help with weight loss. It is gluten free, and very high in protein.

Eggs: Superfood

Surprisingly eggs are one of the top superfoods, and have even been labeled the "perfect food" by healthline.  People in the past have often worried about eating eggs, but times have changed and now eggs are being pushed as one of the most nutritious foods on the planet.  I whole egg contains all the nutrients to make a baby chicken, it is packed with a bounty of vitamins including Vitamin A, Folate, B5, B12, B2, Phosphorus, and Selium.  It might be high in cholesterol, but for most people it doesn't adversly affect your blood cholesterol, but instead raises your HDL or good cholesterol. They also.contain Choline which is commonly unknown,  but is crucial to build cell membranes, and producing signaling molecules in the brain.  They help reduce the risk of heart disease and support the health of your eyes.  They are also high in a quality complete protein the has all the right ratios of the amino acids to be perfect for the body to directly use and access.  Lowers risk of heart attack and strokes. They fill you up with low calories, so surprisingly enough they are connected with helping people loose weight.  What an amazing Superfood!

Berries: Superfood

Berried have the highest antioxidant activity of commonly consumed fruit, next to pomegranates, which allows them to protect your cells from free radical damage.  They are thought to improve blood sugar and insulin response. They are high in fiber, low in calories, yet high in vitamins. They fight inflammation and defend against infections or injuries. They also believe they help lower your cholesterol, protect against cancer, and reduce wrinkles in your skin.   The benefit I like the most is that they also improve your vein walls improving the function of your arteries.  

Maca Powder: Superfood

Maca is not a well know super food, but it benefits a better libido, reduces menopause symptoms like hot flashes, boosts your energy, increases fertility, improves mood, reduces blood pressure, improves learning, fights free radicals, and reduces sun damage.  Its flavor mixes well and is hard to identify when in the pudding.
